Our Story

On a sunny, California Spring morning in 1995, we tried to come up with something completely unique. We decided to crush fresh with Arbequina, Arbosana and other prominent Californian olive varietals and thus managed to create a new, fresh twist on California olive oil. Our success with artisan olive oils soon led us to the crafting of wholly unique vinegars using locally-sourced wine and traditional fermentation methods. Our premium vinegars and olive oils give chefs and home cooks endless options to bring the fresh flavors of California to the table.

Our Vinegars are handcrafted in small batches at our state-of-the-art fermentation facility in the heart of California wine country. Our very own vinegar cultures and time-honored techniques allow nature and time to work their magic.

Sustainability

We committed to transitioning thousands of acres of traditionally planted olive groves to sustainable, organic trees by 2025. We are investing several million dollars over the next decade to incentivize California love growers to move toward the production of organic fruit. In addition, we planted thousands of new organic acres, well over 200,000 trees. The planting will yield over 300,000 gallons of organic extra virgin olive oil when fully mature.
