Looking for an easy, quick and refreshing salad to toss up within minutes on a hot summer day? We’ve got you covered! As its name suggests, watermelon is one of the most hydrating foods and is also a great source of antioxidants like beta-carotene and vitamin C. This sweet fruit is delicious with Feta cheese, fresh basil and a splash of white balsamic. Serve as a side or stand-alone snack at your next summer picnic or backyard BBQ. It’s sure to be a crowd pleaser!
- Prepare all the ingredients as listed above.
- Toss the cubed watermelon, Feta cheese, sliced basil and O White Balsamic Vinegar gently in a bowl.
- Serve on individual salad plates, then finish with a fresh drizzle of O California Extra Virgin Olive Oil or O Fresh Basil Olive Oil and freshly ground pepper to taste.
While you can certainly opt for a package of pre-crumbled Feta for convenience, we suggest selecting a block of Feta and cutting or crumbling it yourself. As a block, the cheese keeps more moist, milky and flavorful. If you don’t use up all of your Feta at once, you can store the remainder in extra virgin olive oil to preserve its moisture and taste. This method is especially great if you plan to use the rest of the Feta over salad.
