Radicchio Endive Fennel Salad with O Organic Apple Cider Vinegar


Description

Enjoy this recipe from the blog Running to the Kitchen. This slaw-type salad is served with a tangy dijon herb dressing to create a bright and refreshing side dish. Enjoy with a lean protein for a healthy, balanced meal.


Ingredients

For the vinaigrette:

• 1/4 cup O Organic Apple Cider Vinegar
• 3 tablespoons Dijon mustard
• 1/4 cup fresh tarragon
• 1 tablespoon fresh thyme leaves
• salt and pepper to taste
• 1 tablespoon O Artisan Organic Extra Virgin Olive Oil

For the salad:

• 1 small head radicchio
• 2 small endive
• 1/2 small bulb fennel


Instructions

For the vinaigrette:

  1. Place O Organic Apple Cider Vinegar, mustard, herbs, salt and pepper in a food processor and process until well combined. With the processor running, slowly drizzle in O Artisan Organic Extra Virgin Olive Oil. Pour over prepared salad.

For the salad:

  1. Thinly slice the radicchio, endive and fennel and place in a large bowl. Pour the dressing over the salad, toss until well combined and serve immediately.


Notes

The salad and dressing can be prepped ahead of time and stored separately in the refrigerator. Dress the salad right before serving.
