We love a cool, crisp coleslaw as a refreshing side dish or even as a healthy topping on sandwiches and burgers. Cabbage, a cruciferous vegetable, is the base for any slaw and is stocked with vitamins C and K, folate, fiber and more. Get creative and add apples to the mix for a bit of sweetness and a plate full of antioxidant power. Our go-to recipe includes a bright, tangy dressing featuring O Honey Apple Vinegar and is pretty delicious if we do say so ourselves!
- In a small bowl, whisk together the Greek yogurt, O California Extra Virgin Olive Oil and O Honey Apple Vinegar to make the dressing. Add salt and pepper to taste.
- In a medium bowl, combine the finely sliced cabbage & Fuji apples to create the slaw.
- Just before serving, mix the dressing with the slaw.
- Sprinkle with the roasted almond or pecan slivers if desired.
Tip: To cut down on prep time (literally) and achieve perfectly paper-thin strands of cabbage, we recommend using a mandoline slicer. This versatile tool is one of our favorite kitchen gadgets and is a game changer!
