Please note that we require a phone order to ship outside of the continental US, so if you enter an address in Alaska, Hawaii or Canada for shipping, your order will be unable to be placed. Extra virgin olive oil (EVOO) is often considered a healthy substitute for butter and other cooking oils. We also love to pair our EVOOs with our vinegars (and sometimes add fresh herbs and/or spices) to make vinaigrettes, marinades, delicious bread dips and more.

Our flavorful artisan crushed olive oils are handcrafted finishing oils and can be drizzled over prepared dishes just before serving to flavorfully enhance an entree, appetizer, side or even a dessert dish. We crush carefully selected olive varietals just hours after they’ve been harvested from the family farms where we source them in order to make our extra virgin olive oils. We crush our favorite California-grown olive varietals to produce our certified O California Organic Extra Virgin Olive Oil and our premium O California Extra Virgin Olive Oil.

The olives and ingredients, such as ripe citrus and fresh herbs, that are used to make our flavorful artisan crushed olive oils, are grown, harvested and crushed in California.

Our vinegars begin their journey as premium wine varietals produced in the heart of California’s wine country.

O California Organic Extra Virgin Olive Oil is certified 100% organic by the California Certified Organic Farmers (CCOF), which is USDA approved.

All of our products are responsibly sourced and 100% clean label. No chemicals, pesticides, preservatives, coloring, etc. No artificial anything — ever! Just naturally delicious and nutrient-rich food products made from real food.

O olive oils should be stored out of direct sunlight and away from exposure to heat, so a kitchen cabinet or pantry is the perfect home for these tasty treats. Additionally, our olive oils are bottled in dark glass, which helps to protect precious contents from exposure to sunlight. Refrigeration is not required or recommended for olive oil products, as doing so can affect the flavor over time. O olive oils are listed with a shelf life of 2 years, but you will likely finish yours long before then!

O vinegars are fermented products and due to their acidic nature, are self-preserving and do not need to be refrigerated. They, too, should be stored in a kitchen cabinet or pantry protected from extreme temperatures and sunlight. While we list our wine vinegars with a shelf life of 5 years, vinegar has a practically indefinite shelf life and like the wines they originate from, vinegars tend to improve with age (especially those made with red wines).

All of our products have “best by” dates printed on the bottles for recommended guidance. Additionally, harvest dates are printed on our extra virgin olive oils.

The harvest date is the actual date that the olives were picked or harvested from the family farms where we source them. Once harvested, the olives are crushed within hours of being picked to obtain the freshest olive oil with beneficial polyphenols and antioxidant richness.

We harvest and press 100% organic, 100% California Arbequina, Koroneiki and Arbosana olives to produce our O California Organic Extra Virgin Olive Oil. Our premium O California Extra Virgin Olive Oil is created using California Arbequina, Koroneiki, Arbosana and Chiquitita olives of the highest quality. The inclusion of Chiquitita adds a hint of almond and apple flavor to the premium blend — a delicate distinction.

California-grown Arbequina, Koroneiki and Arbosana olives are crushed together with ingredients, such as ripe citrus and fresh herbs, resulting in our flavorful artisan crushed olive oils.

Polyphenols are natural antioxidants found in olive oils (and many other natural oils) that are considered healthy and beneficial. These compounds can help protect living cells against inflammation, free radicals and chronic diseases such as certain cancers and atherosclerosis. Extra virgin olive oil (EVOO) contains more polyphenols than other olive oil types (Source: California Olive Oil Council).

Polyphenol levels vary with each harvest and can change over time.

Oleic acid is a monounsaturated omega-9 fatty acid that makes up about 75% of extra virgin olive oil (EVOO), more than other vegetable oils. This monounsaturated fat is considered beneficial and can help improve overall blood cholesterol by decreasing LDL (“bad”) cholesterol levels and increasing HDL (“good”) cholesterol levels (Source: California Olive Oil Council).

Oleic acid levels help determine if an olive oil can be considered extra virgin based on overall acidity. It is measured as grams of oleic acid per 100 grams of oil and commonly known as the free fatty acidity (FFA) of the oil, presented as a percentage. Freshly pressed oil made carefully from freshly picked, healthy olives and without the use of excessive heat normally have less than 0.8% FFA, which is the international requirement for an oil to be considered extra virgin (Source: Olive Oil Source). The California standard is even lower at 0.5% FFA per the California Olive Oil Council (COOC).

Oleic acid levels vary seasonally and by harvest. O’s extra virgin olive oils are consistently well below the 0.5% FFA COOC standard.

Additionally, in order to be classified as extra virgin, olive oil must meet international standards and parameters that indicate careful handling and storage of the olives and oil, and no use of chemicals or extreme heat during the crushing and oil extraction processes. EVOO must also pass sensory panels and be free of defects of flavor or odor (Source: California Olive Oil Council). In other words, EVOO is the natural juice, cold pressed from fresh olives and is the highest grade of olive oil available.

Although their acidity levels would qualify our artisan crushed olive oils as extra virgin, none of our artisan crushed oils are technically considered extra virgin because they are crushed with other ingredients, such as ripe citrus and fresh herbs. In order to be classified as extra virgin, olive oil must contain the pressed juice of the olive only and cannot be altered or combined with any other ingredients or flavors (Source: California Olive Oil Council).
At O we use time-honored techniques to handcraft our premium vinegars, allowing nature and time to work their magic to create complex and rich vinegars. Patience truly is a virtue when it comes to vinegar.

The actual length of aging varies by product and depends on the type and flavor of barrel, as well as the expertise and discretion of our master vinegar maker.

O’s vinegars are fermented and unpasteurized, so live cultures are present, normal and may result in hazy sediment and/or the formation of what is called a “vinegar mother” which can appear gelatinous in texture. This phenomenon is natural and not harmful. In fact, these cultures are considered to be beneficial to your health. The presence of a vinegar mother does not mean the vinegar is spoiled. Simply remove the mother and continue to enjoy the vinegar as desired.

Over time, vinegar can darken and become stronger in taste. This is perfectly normal and safe. In fact, much like wine, vinegar tends to get better with age.

Yes, all of our vinegars are California Proposition 65 compliant. For out-of-state O fans, California Proposition 65 regulates the amount and disclosure of toxins found in the food and water supply. In relation to balsamic vinegars, this act addresses concerns about the sale of potentially lead-contaminated balsamic vinegars from Europe. California Proposition 65 has particularly rigorous safety standards and our balsamics are fully compliant, consistently testing well below the mandated requirements. Our balsamics are handcrafted one batch at a time under our strict supervision at our state-of-the-art vinegar fermentation facility in Sonoma County, California. It’s not just what we put in, but what we leave out that makes our vinegars both healthy and delicious!
